La Gaufrerie takes on the bold challenge of offering a unique menu, exclusively featuring savory and sweet waffles.
It all started with a simple observation: in Paris, you can easily find savory crepes to-go, foie gras macarons, or even tomato éclairs. But where can you sit down and enjoy a savory waffle? Nowhere—until now. With La Gaufrerie, it’s finally possible! So, get your forks ready and dig in!
The Venue
Nestled in the vibrant Les Halles district, near Châtelet-Les Halles metro station, the chef fell in love with the charming rue Marie Stuart. More intimate than its bustling neighbor, rue Montorgueil, this street has become home to cozy, creative dining spots.
La Gaufrerie provides a welcoming and intimate setting, with space for about 30 diners. Featuring exposed stone walls and wooden beams, the décor is both authentic and eclectic. Here, the warmth of the ambiance perfectly complements the originality of the cuisine.
The Cuisine
At La Gaufrerie, one star ingredient takes center stage: the waffle. Reimagined in both savory and sweet variations, the waffle is transformed with passion into dishes that are as original as they are delicious using different kind of flour : cheackpeas, lentils, buckwheat...
The concise yet bold menu changes with the seasons, drawing inspiration from the classics of French cuisine and vibrant exotic flavors. Creativity here serves one mission: to delight and surprise.
The Partners
La Gaufrerie is committed to uncompromising quality. All ingredients are carefully sourced using organic wholemeal flour, organic eggs and brown sugar to make a unique waffle experience. Jonathan meticulously selects each product, collaborating closely with passionate, authentic producers to ensure the very best quality and offering clients a broad choice of artisanal ciders, pear ciders or beers.
The Team
Jonathan, a self-taught chef, embarked on his culinary journey driven by passion—or perhaps a touch of madness! Growing up in a family of bakers and pastry chefs, he was immersed in the world of delicious aromas and sweet treats from an early age. After his studies, Jonathan set off to explore the globe, returning with a wealth of new flavors and inspirations.
Every dish at La Gaufrerie tells a story. The "Occa" pays tribute to the breathtaking Lake Titicaca, the "Waffle" captures the essence of British Fish n’ Chips, the "Veni, Vedi, Vici" echoes the conviviality of Italian aperitivos.
Through his cuisine, Jonathan shares his personality, memories, joy, and a touch of whimsy, crafting a truly unique and unforgettable culinary experience.
